Mushroom Spinach Mini Meatloaf

Servings 4


  • 1 - 1.5 lbs ground beef
  • 1 bag frozen mushroom
  • 2-3 cups spinach
  • 1 tbsp avocado oil
  • 2 tbsp garlic, minced
  • 1 small onion, diced
  • seasonings to taste


  • Preheat oven to 350℉
  • In a large skilled on medium heat, add the avocado oil, diced onions, mushroom, spinach and garlic and sauté until browned.
  • Mix it in a bowl with the ground beef until well combined
  • Add the mixture to 12 cupcake tins (packed)
  • Bake at for 20-25 minutes or until internal temperature has reached 165℉
