Quinoa Egg Muffins

Quick and easy quinoa egg muffins is so versatile and makes a nutritious breakfast or snack!

Ingredients

1 cup cooked quinoa

    2 eggs

      1/2 cup diced tomatos

        1/2 cup diced peppers

          1/4 cup cheese of choice

          • seasonings of choice

          Instructions

          • Preheat oven to 350?F
          • Mix all ingredients together and make in greased muffin tins for about 20-30 minutes.

          Notes

          Makes about 10 muffins.
          You can also add in spinach, mushrooms, onions, carrots, etc? The possibilities are endless!
