

Turkey Sweet Potato Chili

Ingredients
- 2 tbsp avocado oil (or any oil)
- 1 medium onion, diced
- 2 cloves garlic
- 1 medium sweet potato, peeled and diced
- 1 medium red orange pepper, diced
- 1 can black beans, drained
- 1 can fire roasted diced tomatoes, undrained
- 1/2 cup broth or water
- 3 tbsp tomato paste
- 2 tsp chilli powder
- 2 tsp ground cumin
- 1 tsp garlic powder
- salt and pepper to taste
- 2 cups spinach (optional)
- 1/2 cup sweet corn (optional)
- 1/4 cup parsley or cilantro, chopped (optional)
Instructions
- Press the "Saute" button on your Instant Pot to warm up
- Saute turkey with the avocado oil fo about 5 minutes. Add onion, garlic, peppers, sweet potato for another 5 minutes
- add remaining ingredients and stir
- Press “OFF” button and then press the “Manual” button and add 10 minutes high pressure
- Natural Pressure Release of Quick Release after 10 minutes
- If chili looks watery/runny, press “OFF” then press “Saute” button and let it simmer until the desired water is abosrbed
