Cauliflower Rice Balls

Servings 14 servings


  • 2 lbs cauliflower rice
  • 4 chicken sausage links, casing removed and cut into small dice
  • 1 tbsp avocado oil
  • 1 tbsp minced garlic
  • 1/4 cup tomato sauce
  • 1 tbsp oregano
  • 1 tsp salt
  • 1 tsp pepper
  • 2 eggs, beaten
  • 1/2 cup bread crumbs
  • 1/2 cup panko
  • oil sprau
  • parmesan cheese (optional)


  • In a large skillet, add avocado oil and turn the heat to medium
  • Add chicken sausage and garlic, sautée until golden brown
  • Add cauliflower rice, tomato sauce, oregano, salt, and pepper and sautée until liquid is absorbed
  • Remove from heat and cool for 5 minutes
  • Add mozzarella cheese and mix until well combined
  •  Shape mixture into balls (about 2 inches) makes about 14 balls. Squeeze any excess liquid
  • Mix the bread crumbs and panko together (you can add seasonings of choice if it is not seasoned)
  • Coat the ball with the eggs then coat with the bread crumbs and panko mixture. Repeat until all balls are coated
  • Preheat air fryer to 400F. Add the balls to the air fryer and lightly spray with oil. Flip halfway and lightly spray with oil again. Air fry for about 10 minutes or until golden brown.
  • Serve with extra tomato sauce and parmesan cheese
