
No-Bean Chicken Chili

Ingredients
- 1 lb ground chicken (or sub for beef/turkey)
- 2 cans fire-roasted diced tomatoes
- 1 onion, diced
- 1 sweet potato, diced
- 1 zucchini, diced
- 1 bag frozen peppers
- 1 tbsp tomato paste
- 1 tbsp better than bouillon paste
- 1 tbsp avocado oil
- 1 cup water
- 1 cup cilantro, chopped
Instructions
- In a large saucepan (on medium heat) or instant pot, add the avocado oil and onion and sautée until translucent
- Add ground chicken and sautée until browned
- Add taco seasoning, tomato paste, bouillon paste, fire roasted diced tomatoes, sweet potatoes, zucchini, and peppers
- Add water and mix
- If using an instant pot put on high pressure for 30 minutes. If cooking on a stove top simmer for 40-45 minutes or until desired consistency
- Add cilantro and enjoy!
