Zucchini Waffles

  • 2 cups zucchini, shredded
  • 2 tsp salt
  • 1 cup low-fat cheedar cheese
  • 1 cup almond flour
  • 1 egg, lightly beaten
  • spices to taste


  • Preheat your waffle iron to medium high.
  • Squeeze the water from the zucchini using a cheese cloth or paper towels.
  • In a large bowl combine zucchini, salt, almond flour, low-fat cheese, and egg.
  • Pour mixture to your hot waffle iron
  • Cook for about 10 minutes or until golden brown and crispy.
